That Smacks

Sixteen hours over hardwood, a Filipino soul, and a table dressed for the occasion. Catering across the Valley.

Smoke moves slow here. Sixteen hours over hardwood, a Filipino soul, and a table dressed in gold for the occasion.

The Craft

Great Gatsby met a smokehaus.

We smoke Arizona-style — Prime brisket, hardwood, and patience — then we season it with where we come from. Adobo. Sisig. Silog. Lumpia by the dozen.

The result isn't fusion for novelty's sake. It's two traditions that were always meant to sit at the same table: American low-and-slow, and the Filipino instinct that every good thing is worth gathering around. We just serve it with a little more polish than the pit usually gets.

Boutique means we don't do everything. We do a short, deliberate menu — flawlessly — and we dress the table like the occasion matters. Because it does.

Questions

Answers before you ask.

What kind of food does Coronado Smokehaus serve?

Coronado Smokehaus is a Filipino-fusion barbecue food truck in Phoenix, Arizona. We smoke everything low-and-slow using traditional American BBQ technique, then layer in Filipino flavors and dishes — think Sixteen-Hour Brisket, Brisket Lumpia, A1 Beef Bao, and banana-ketchup glazed wings alongside classics like smoked pork ribs, pulled pork, and pork belly burnt ends.

Where can I find Coronado Smokehaus?

Coronado Smokehaus is a mobile food truck based in Phoenix, Arizona, with a regular presence in the Coronado Historic District and rotating stops around the Phoenix metro area. The current week’s schedule is posted every Monday on Instagram (@coronadosmokehaus) and on the "Find the Truck" section of this site.

Does Coronado Smokehaus do catering?

Yes. Coronado Smokehaus caters everything from intimate dinners to 100-plate events, with either elegant drop-off and setup or full on-site staffed service. Private full-truck bookings are also available. Reach out through the website to start a quote.

What is Filipino-fusion barbecue?

At Coronado Smokehaus, Filipino-fusion barbecue means pairing traditional American low-and-slow smoking technique with Filipino flavors and dishes — adobo, sisig, silog, lumpia, and banana ketchup glaze — rather than treating the fusion as a novelty. Recipes are pulled from the founders' own family, blending Filipino and American home cooking with pit-smoked barbecue.

What is Coronado Smokehaus known for?

Coronado Smokehaus is best known for its Sixteen-Hour Brisket and its Filipino-fusion dishes, particularly the Brisket Lumpia, which regularly sells out at events. The truck is a family-owned, boutique operation — a short, deliberate menu done well rather than a large menu spread thin.

Does Coronado Smokehaus have vegan options?

Yes, vegan options are available — just ask when you order at the truck.

Is Coronado Smokehaus a restaurant with a storefront?

No — Coronado Smokehaus is a mobile food truck and catering company, not a fixed-location restaurant. There’s no dine-in storefront; the truck moves to weekly stops around Phoenix and to booked private events. Check the weekly schedule on Instagram or the "Find the Truck" section of this site before heading out.

How far in advance should I book catering?

Reach out as early as you can once you have a date — the process moves fast once you do (a short conversation, a quote the same week, a date held), but availability depends on the calendar filling up, especially for weekends and larger events.

What's the difference between drop-off catering and full-service catering?

Drop-off and setup means the full Coronado Smokehaus spread is delivered and staged for your event without the truck itself on-site. Full-service staffed catering means the crew is on-site serving throughout the event. Private full-truck bookings — the actual truck, parked at your event — are also available.

Is Coronado Smokehaus family-owned?

Yes. Coronado Smokehaus is run by Steve and Lisa, with recipes pulled from both of their families — not just a single family's cookbook, but a genuinely blended one built into the menu.
